Our Story
Safran is rooted in the rich traditions of Mediterranean cooking, blending warm spices, fresh ingredients, and heartfelt hospitality. From weekday lunches to unforgettable gatherings, we bring a taste of culture and comfort to every table.

How It All Started
Hassan Kaisoum is a chef and restaurateur who was born and raised in the city of Rabat in the country of Morocco. At age 17, he moved to France, where he received his education and training in hotel and restaurant, sommelier, and culinary arts. While living for ten years in cities like Paris and Lyon, he was privileged to work under numerous world class chefs in many famous hotels and restaurants while he gained experience and built his career.
Following an opportunity, he moved to Montreal, Canada, eventually continuing on his culinary and restaurateur journey to the United States, where he lived in San Francisco, California, Portland, Oregon, and Maui, Hawaii. Hassan currently resides in Charlottesville, Virginia, where he opened a successful restaurant, and he and his wife raised their family.
Beyond his love of family, cooking and soccer, Hassan is happiest when working with others in his community to help provide resources and opportunities for individuals and families. This is Hassan's first book. He plans to continue cooking and writing.
